Angel Hair and Fresh Vegetable Soup
- 1 medium carrot, peeled and thinly sliced
- 1 medium sweet red pepper, seeded and cut into very thin slices
- 1 quart water
- 1 quart low-sodium non-fat chicken broth
- 1/2 tsp. dried basil
- 1/4 tsp. dried oregano
- 1/4 tsp. dried thyme
- 1 cup packed fresh spinach, thinly sliced
- 1/4 lb. fresh mushrooms, thinly sliced
- 2 oz. dry angel hair pasta, broken in quarters
- 3 Tbsp. grated Parmesan cheese
Combine first seven ingredients in a large pot and bring to a boil. Cover, reduce heat and simmer 5 minutes or just until vegetables are tender. Add spinach, mushrooms and angel hair pasta. Simmer 3 to 4 minutes or until pasta is al dente. Ladle into serving bowls, and sprinkle each with Parmesan cheese.

Spinach Tortellini Soup
- 1 large can (49 1/2 ounces) fat free chicken broth
- 1/4 tsp. garlic powder or 1 clove garlic, minced
- 1/8 tsp. pepper
- 1 cup frozen cheese-filled tortellini
- 2 cups coarsely chopped fresh spinach leaves or 1 cup coarsely chopped frozen cut leaf spinach
In large saucepan mix broth, garlic powder and pepper. Over medium-high heat, heat to a boil. Stir in tortellini. Reduce heat to medium. Cook 10 minutes. Add spinach. Cook 5 minutes more or until tortellini is done.

Apple Spice Bread
- 1 cup shredded apple (choose a sweet variety such as Red Delicious)
- 1/4 cup egg substitute
- 1/4 cup light sour cream
- 1 1/2 cups all purpose flour
- 2 Tbsp. packed brown sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. cardamon
Preheat oven to 350*F. Spray a loaf pan with cooking spray, dust with flour and set aside. Mix apple, sour cream, and egg substitute in a large bowl. Stir in remaining ingredients. Spread batter in pan and bake 35 to 40 minutes or until golden brown. Cool in pan 5 minutes, then turn onto a wire rack to finish cooling. Cut into 20 slices.
