Angel Hair and Fresh Vegetable Soup
Combine first seven ingredients in a large pot and bring to a boil. Cover, reduce heat and simmer 5 minutes or just until vegetables are tender. Add spinach, mushrooms and angel hair pasta. Simmer 3 to 4 minutes or until pasta is al dente. Ladle into serving bowls, and sprinkle each with Parmesan cheese.

Spinach Tortellini Soup In large saucepan mix broth, garlic powder and pepper. Over medium-high heat, heat to a boil. Stir in tortellini. Reduce heat to medium. Cook 10 minutes. Add spinach. Cook 5 minutes more or until tortellini is done.

Apple Spice Bread Preheat oven to 350*F. Spray a loaf pan with cooking spray, dust with flour and set aside. Mix apple, sour cream, and egg substitute in a large bowl. Stir in remaining ingredients. Spread batter in pan and bake 35 to 40 minutes or until golden brown. Cool in pan 5 minutes, then turn onto a wire rack to finish cooling. Cut into 20 slices.
